4 tomatoes, chopped
½ red onion, finely chopped
1 small handful of basil, torn into small pieces
1 tbsp. small capers
1 tbsp. extra virgin olive oil
½ lemon, juiced
2 tbsp. pesto sauce
4 Mediterranean Herb Ryvita Crispbreads
1 Place the chopped tomatoes, onion, basil, capers, olive oil and lemon juice in a small bowl and combine well.
2 Check for seasoning.
3 Spread the pesto sauce over the Ryvita and top with the tomato mixture.
