The Game Fair is swiftly approaching!
Bringing together the best of the British countryside, this year will feature Bear Grylls, who will be challenging the brave with his masterclass in self-rescue skills. Television legend Gregg Wallace will also be launching his Shot to Pot restaurant, which will be serving a rustic menu, while children will be entertained in the Active Countryside Area and the Kidz Zone, while the Activity Crèche will keep the younger faces entertained.
We've spoken to Mike Robinson, director and chef of the Berkshire pub-restaurant, The Pot Kiln. Living and breathing game, Mike will be bringing his passion to the crowd as he hosts a series of cookery demonstrations and informative displays. He fills us in on his favourite recipes, what to expect this year, and more!
1. What is your favourite recipe for this time of year?
My favourite recipe for summer is a delicious barbequed venison, specifically using Muntjac deer.
Barbequed haunch of Muntjac with balsamic and rosemary
First take a haunch of deer and completely debone. Then butterfly the meat so it’s 1 inch thick all over. Put the meat in a sealed bag with a handful of rosemary, glug of olive oil, 3 smashed garlic cloves and ground pepper. Rub the meat with the herbs and seasoning, and leave in the fridge to marinate overnight.
Heat the barbeque so the charcoal is white. Grill the meat for 5 minutes, turn over and grill for another 5 minutes. Lift the venison to a higher shelf and brush the meat with good quality balsamic vinegar on both sides, cooking for 20 minutes in total.
Rest the meat for 5 minutes on a wooden board and carve into slices. Serve with a watercress salad and baked potatoes for the perfect summer evening meal.
2. What's your favourite type of game to cook, and why?
My favourite type of game to cook is venison; it’s available all year round in different forms and it’s how I make my living!
3. What's the one tip anyone cooking game should adhere to?
Never overcook your game. Cook it gently as high heat tends to dry game meat out.
4. You're at The Game Fair this year which is exciting! What are you particularly looking forward to there?
The Game Fair is a highlight of my year! This year I’m really looking forward to hosting my Antler to Tail deer demonstrations at The Game Fair Theatre every day, and catching up with old friends.
