A Mother's Day breakfast to impress

Spoil your mum with breakfast in bed this Mothering Sunday (6th March 2016)

Sweet and Savoury CrumpetsCrumpets

Serves 1

2 crumpets
75g Primula cheese
8g dried apricots, finely chopped
15g pistachios, chopped
1 tablespoon honey

1. Toast the fresh crumpets and then spread with the cheese.

2. Top the crumpets with the apricots and pistachios, then drizzle with the honey.

Tip: Serve while warm.

Brunch Croissant

Serves 1

1 large egg
50g Primula cheese
Salt
Pepper
1 croissant
Knob of butter
Handful of watercress, chopped

1. Pre-heat the oven to 200°C/180°C Fan/Gas Mark 6.

2. Crack the egg into a bowl and add the cheese. Season with salt and pepper and mix.

3. Place the croissant in the oven to warm.

4. Heat the butter in a large frying pan and add the egg mixture. Scramble until the eggs are fully cooked, then fold in the watercress.

5. Remove the croissant from the oven and fill with the egg mixture.

Mushroom Omelette MuffinsMushroomOmlette

Serves 2

1 teaspoon olive oil
250g chestnut mushrooms, sliced
4 medium eggs
2 Duchy Originals wholemeal muffins
2 tomatoes, sliced
50g rocket

1. Heat the oil in a large non-stick frying pan and cook the mushrooms over a high heat for 2-3 minutes until golden.

2. In a medium bowl, beat the eggs then pour into the frying pan. Cook the omelette for a few minutes on each side, reducing the heat halfway through, until set.

3. Split the muffins and toast. Cut the omelette into 8 pieces and arrange on top of the toasted muffins halves. Add the tomatoes and rocket. Serve.

Blueberry and Granola FoolBlueberryandGranolaFool

Serves 4

270g blueberries
2 teaspoons clear honey
75g Waitrose LOVE life granola with almonds and sultanas
250g Greek yoghurt
1 tablespoon dark brown muscovado sugar

1. Place 250g of the blueberries and the honey into a small saucepan and heat over a low heat until the fruit softens slightly. Remove from the heat and leave to cool.

2. Spoon the granola into 4 small serving glasses, top with half of the blueberry mixture, followed by half of the yoghurt. Add another layer of blueberries and a further layer of yoghurt. Top with the remaining blueberries and scatter the brown sugar over each.

3. Place in the fridge for 10-15 minutes to allow the sugar to melt into the yoghurt and turn syrupy.

Tip: Try varying the fruit. All berries work well, as does grated apple with a pinch of ground cinnamon.

Cottage Cheese and Blueberry PancakesPancakes

Serves 2

2 medium eggs
175ml milk
150g cottage cheese
2 tablespoons caster sugar
1 teaspoon vanilla extract
200g plain flour
50g rolled oats
2 teaspoons baking powder
150g blueberries
1 teaspoon butter

1. Whisk together the eggs, milk, cottage cheese, sugar and vanilla extract.

2. In a separate bowl, place the flour, oats and baking powder. Mix well before stirring in the egg and milk mixture. Once combined, fold in the blueberries.

3. Melt the butter in a non-stick frying pan.

4. Drop a spoonful of mix into the pan. You will get 3 or 4 pancakes per batch. When bubbles start to form on top, flip and cook on the other side for 2 minutes, then serve in stacks.

Tip: Serve with summer berries and chopped banana or maple syrup.

Quinoa Porridge with Goji Berries, Pistachios and BlackberriesQuinoa

Serves 4

250g Merchant Gourmet cooked quinoa
400ml almond milk
2 tablespoons almonds, ground
2 tablespoons goji berries
2 tablespoons agave syrup
1 teaspoon cinnamon
½ teaspoon vanilla extract
100g blackberries
2 tablespoons pistachios, chopped

1. Place all of the ingredients except from the pistachios in a saucepan and stir to combine.

2. Place over a medium heat and bring to the boil for approximately 8-10 minutes.

3. Divide the porridge between 4 bowls and serve sprinkled with the chopped pistachios.
