10oz /250g butter
10oz /250g plain chocolate
2tsp / 2x5mlsp vanilla essence
12oz / 300g soft brown sugar
6oz / 150g plain flour
4 ½ oz / 120g Dark Chocolate McVitie’s Digestives Nibbles
4 ½ oz / 120g Dark Chocolate or Caramel McVitie’s Digestives Nibbles (for topping)
4tbsp / 4x15mlsp salted caramel sauce
1. Preheat oven to fan oven 170C conventional oven 180C/350F/Gas Mark 4. Line base and sides of a 9in / 22cm square tin with baking parchment.
2. Put the butter and chocolate into a heatproof bowl and set over a pan of simmering water, warm gently over a low heat until the butter has melted. Take off of the heat, stir and leave the chocolate to melt.
3. Whisk the eggs, vanilla and sugar together. Whisk in the cooling chocolate mixture and continue to whisk until evenly coloured. Sieve the flour over the mixture and fold in with the Dark Chocolate McVitie’s Digestives Nibbles. Spoon into prepared tin and bake for 35 - 40 minutes or until the edges are set and the centre slightly soft.
4. Leave to cool in tin. Drizzle over the salted caramel and scatter with Dark Chocolate or Caramel McVitie’s Digestives Nibbles. Cut into 12 -16 squares.
