150g Doves Farm Potato Flour
2tsp Doves Farm Baking Powder
200ml Double Cream
50g Icing Sugar
1tsp Vanilla Extract
1 Sieve the potato and Doves Farm baking powder into a bowl. Set aside.
2 Separate the eggs and beat the whites until light and fluffy.
3 Beat in the sugar a spoon at a time.
4 In another bowl beat the yolks until they thicken slightly.
5 Fold the yolk into the egg white using a cutting and folding action.
6 Fold in the sieved potato and baking powder mix a spoon at a time.
7 Put the mixture into an oiled and lined 18cm/7” round deep cake tin.
8 Bake in a preheated oven for 40 minutes. with the vanilla and icing sugar.
9 Whip the cream until thick .
10 Roughly mash all but a handful of the strawberries and fold them into the cream,
11 Fold in icing sugar and vanilla
12 Slice the cold sponge into three layers.
13 Divide and spread the strawberry cream over the three sponges.
14 Place the sponges on top of each other.
15 Decorate the top with the reserved strawberries.
