Scrambled Egg with Salmon, Caviar and Chives

Serves: 4

You will need

6 Heritage Breeds Copper Marans eggs
2 tbsp. salted butter
Salt and pepper to taste
Dash of milk
200g salmon fillet (alternatively smoked salmon)
4 tsp Caviar (of your choice)
1tsp chives


1 Cut salmon fillets into 50g squares.

2 Heat olive oil in a pan and cook salmon fillets presentation side up for approximately 5 minutes.

3 Melt the butter in a large sauté pan on a low heat.

4 Crack the eggs into a bowl and whisk for 2 minutes.

5 Pour the egg mixture into the pan and stir continuously through the warmed butter. Remove from the heat just before the eggs are cooked. Season to taste.

6 Divide the eggs between 4 plates or bowls.

7 Place salmon on top with a teaspoon of caviar and a sprinkling of chives to garnish.
