Carrot, Sweet Potato and Halloumi Rostis

Serves: 4

You will need

3tbsp Olivio oil, for frying
300g sweet potatoes, grated
200g carrots, grated
100g Halloumi cheese, finely chopped
1tsp cumin seeds
1 egg, beaten
2tbsp plain flour
8 rashers bacon
1 ripe avocado
Salt and freshly ground black pepper
A few cherry tomatoes, halved



Directions

1 Pour the Olivio oil into a large frying pan and set aside.

2 Mix the grated sweet potatoes, carrots, Halloumi cheese and cumin seeds together. Season with a little salt and pepper. Add the beaten egg and flour, then shape into 8 round flat patties.

3 Heat the Olivio oil and gently fry the rostis for 3-4 minutes on each side. (Do this in batches). At the same time, grill the bacon rashers until crispy and mash the avocado.

4 Serve the rostis with the bacon and mashed avocado, with a few cherry tomatoes.

Cook’s tip: You could use feta cheese instead of Halloumi.
