4 Weight Watchers tortillas (or similar)
200 g smoked salmon, sliced
100ml half fat soured cream
Lime wedges, to serve
Tabasco sauce, to serve (optional)
4 ripe tomatoes, de-seeded and chopped roughly
¼ cucumber, chopped roughly
1 small red onion, chopped finely
3 tbsp chopped fresh coriander
Juice of ½ lime
Salt and freshly ground black pepper
1 To make the salsa, combine all the ingredients in a bowl. Season to taste and set aside.
2 Heat the tortillas according to the packet instructions and place one on each serving plate. Top each with the salsa, some smoked salmon slices and a little soured cream and fold. Serve each with a lime wedge and a drop of Tabasco, if you fancy a spicy kick.
