Seriously Strawberry Jam
5 x 250ml jars
You will need
1 kg ripe strawberries
Juice of one unwaxed lemon
1 kg jam sugar
Rinse and clean the strawberries and roughly crush them in a pan. 2.
Mix the strawberries with the sugar and lemon juice then cover and leave to stand for one hour. 3.
Bring the mixture to the boil, stirring it all the time, and leave it on a rolling boil for approximately 4 minutes (setting test). Transfer the hot jam into warm sterilised preserving jars immediately. Close the jars tightly, turn them upside down and leave them to cool for approximately 10 minutes. 4.
Turn the jars over again and leave them to cool fully. Once cooled, store the jars in a cool, dark place.
Tip: Strawberry jam tastes better and looks nicer if you make it fresh. So it's best to freeze ripe strawberries and make smaller portions of jam as and when required.
