Crisp & Fluffy Roast Potatoes

Serves: 4

You will need
700g Rudolph potatoes, peeled
3-4 tablespoons rapeseed oil

1. Pre-heat a roasting tray in an oven set to 200ºC/Gas Mark 6.

2. Cut the potatoes into large chunks and rinse under cold running water. Place in a pan and cover with water. Bring to the boil, then reduce the heat and simmer gently for 5 minutes before draining and returning to the pan.

3. Add the oil to the pan and put the lid on, then shake the pan gently to roughen up the edges of the potatoes – this is how you get the lovely crispy edges.

4. Transfer the potatoes and any excess oil to the hot roasting tray and roast for 30-35 minutes, turning after 25 minutes, until golden brown and crispy.

5. Season to taste and enjoy.
