Red Rice, Feta & Watercress Salad

Serves: 2

You will need
1 x 125g sachet of Camargue red rice
2 medium oranges, segmented
80g feta cheese, crumbled
4 large handfuls watercress

Directions
1. Cook the rice in a medium pan of lightly salted boiling water for 25 minutes or until just tender. Drain in a sieve and run under the cold tap until the rice has cooled. Drain again.


2. Mix the cooked rice with the orange segments, feta and watercress. Toss to combine and serve.


Cooks tip: With its distinctive nutty flavour and firm texture, Camargue red rice makes this simple salad special. The rice is sold in large supermarkets and comes in a box of pre-weighed sachets. If you prefer you can use an equal quantity of brown basmati rice.
